In the Emilia-Romagna region, Italy's "Food Valley", researchers are creating the pasta of the future by focusing on its main ingredient: wheat, France 24 reported this week. The work comes as Italy endures one of its most intense heatwaves on record, with nearly all major cities under red alert.

The research aims to develop wheat varieties that can withstand the hotter, drier conditions that climate models predict for the Mediterranean basin. Pasta, one of the world's most beloved staples, depends on durum wheat, a crop particularly sensitive to heat stress during its grain-filling phase.

For the Marche region, the implications are direct. Agriculture here, as across central Italy, relies on the same durum wheat that feeds the nation's pasta industry, and the same warming trends that are pushing temperatures toward 40C in Italian cities are already affecting yields inland.

France 24's Focus programme visited the research facilities in Emilia-Romagna, where scientists are testing wheat lines under controlled conditions that simulate future climate scenarios. The goal is to identify genetic traits — deeper root systems, earlier flowering, better heat tolerance — that can be bred into commercial varieties without sacrificing the quality that defines Italian pasta.

The urgency is measurable. Italy's heatwave has placed 19 major cities on red alert, including Rome, Milan and Naples, with temperatures touching 40C, according to The Local Italy. By Monday, all but two major cities were expected to be under the highest-level warning, the BBC reported. The same heat that strains the power grid and threatens vulnerable populations also stresses field crops.

Durum wheat is the backbone of the pasta supply chain that runs from the plains of Emilia-Romagna south through Marche, Umbria and Puglia. The region's industrial districts — the same small-firm network that produces footwear, furniture and machinery — also include millers and pasta makers who depend on a stable, high-quality domestic supply of semolina.

The research is part of a broader European effort to adapt agriculture to climate change. Similar programmes are underway in Spain and Greece, where drought conditions have already cut cereal harvests in recent years. The difference in Italy is the cultural and economic weight of pasta itself — a product whose identity is tied to specific varieties and terroirs.

For Marche's farmers, the promise of climate-resistant wheat is not abstract. The region's interior, where much of its durum is grown, has seen rainfall patterns shift and summer temperatures climb. A variety that matures earlier or tolerates heat at flowering could mean the difference between a harvest and a loss in a bad year.

The France 24 report did not give a timeline for when new varieties might reach the market, but it noted that the research is advancing quickly. For an industry that has already absorbed shocks from energy prices and supply-chain disruption, the prospect of a wheat that can take the heat is one of the few pieces of good news on the horizon.
